You can't have me because I'm NACHOS! - Weight Loss Week Nine Day One - Lite and Easy (Lite n' Easy)

Breakfast: Pikelets with Fig & Berry Compote and Honey Yoghurt

Love this breakfast, almost feels like you're having dessert for breakfast.

Lunch: Beef Nachos with melted Cheese and Fresh Tomato Salsa
Seasonal Fruit (Grapes)

These Nachos are pretty tasty.  I look at them and think that is way to small but there is so much going on with the chips, beans, mince and salsa that it's quite filling.  The only problem was that I put the cheese over the chips like suggested, but I ended up with a huge mass stuck together in the middle.

Ha ha sorry I had to :)

As you may know I have a cold and my throat is really sore, so I was surprised when I was eating these Grapes that when the juice went to the back of my throat they really burned (like when drinking a hot honey & lemon drink), more than the Orange.

Afternoon Snack: Cinnamon Oat Bar

Not as good as the Choc & Oats Bar but this one is still tasty and devoured in 10 seconds.

Chicken Takeout Sultana

Still my favourite out of the current Indian dishes, but I don't think I'll ever get use to the Sultanas in it.

I've been eating Indian meals lately in hopes that the spices will do something for my cold.  The only problem with Lite n' Easy when you're sick is that you can't really eat what you want, like soup and I don't really like having all the dairy.   

But if I wasn't on Lite n' Easy there is no way I would be eating fruit or probably many vegetables at all.

Weightloss Week Four Day Two Lite and Easy (Lite n' Easy)

Lite n' Easy - Morning to Afternoon
Breakfast: Pikelets with Strawberry Compote and Honey Yoghurt

This is a really yummy breakfast.  I think the combination of strawberry compote and honey yoghurt is a strange one but the honey flavour is not too strong, so it works.

Morning Snack: Two Fruits Fruit Cup

Lunch: Cheese, Tomato and Caramelised Onion Multigrain Sandwich

A pretty uninspiring lunch here, compared to other lunches.  I toasted mine to melt the cheese and make it a little more exciting than just a sandwich.  (Toasted dry with no butter or oil).

Afternoon Snack: Dried Apricots

By the time the afternoon snack rolled around I was starving!  So eating say six or so dried apricots didn’t really cut it for me.

Dinner: Braised Asian Lamb Shanks (#163)

More like lamb RANK! I usually love Lite n’ Easy dinners but when I served this up it looked like dog food and I imagine it wouldn’t taste much better.  The sauce was a bit bland but the meat was the worst, not a nice flavour, stay away of this one.  There are much yummier meals out there.

Additional Items:  2 x Homemade Chai Tea Lattes (low fat milk 1tsp sugar & 1tsp honey in each)

Exercise: Exercise: 20 mins 1 mile walk Leslie Sansone (Can't find exact copy but there is a similar Youtube version here). (I use soup cans as light weights for upper body sections).


I didn’t feel great all day but forced myself and at the end I started wheezing, which I haven’t experienced before after exercise.  I felt horrible after and got a really bad migraine.  As if exercise isn’t hard enough already!
